Fantastic cocktails on offer at Ric's Kitchen

An alcohol license has been granted for Ric's Kitchen, one of Axminster's new eating out venues, launched last August by Ric and Laura Edgell.

Announcing that they would be soon opening their liquor cabinet at their Castle Mount premises in Victoria Place, Ric and Laura posted on social media: "This means, when we reopen, not only will we have a brand new menu, but we will be opening evenings and offering incredible drinks too."

The drinks menu will include traditional and new cocktails including: Lemon Meringue, Old Fashioned, Martini, Absinthe Drip, Daiquiri, Mojito, Amaretto Sour, Margarita, Bloody Mary, Dark and Stormy, Negroni and Calpirinha.

Having looked for a suitable place to open their own business for several years, Ric and his wife Laura finally took the plunge in August, moving from Hampshire to Axminster just as lockdown restrictions were starting to ease.

They initially planned to continue running the premises much along the same lines as its predecessor Hooper's, but just days before opening they decided they wanted to put their own stamp on the place, so they gave it a fresh lick of paint and started planning a new menu.

The result is a combination of the best in local ingredients and dishes drawing inspiration from northern Spain - Ric having previously worked in San Sebastian and fallen in love with the cuisine.

The couple said they were "excited" to see all their customers again and were looking forwarding to welcoming them back.
